Sharing some favorite recipes from hosting retreats: Pear Crisp

I have always believed that good food should be shared. So I’d like to share a few recipes that are favorites from hosting our retreats. These recipes are ones I have tweaked to suit our taste. My timing is an estimate, so please bear with me. I’d love to hear how it goes for you!

Pear Crisp

Ingredients

  • FOR THE FILLING:
  • 4 cups sliced pears from about 2 lb.
  • 2/3 cup granulated sugar
  • 1 Tbsp. lemon juice
  • 1 tsp. vanilla extract
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. kosher salt
  • ½-1 Tbsp cornstarch for thickening
  • FOR THE TOPPING:
  • 1 1/2 cups all-purpose flour
  • 1/2 cup light brown sugar
  • 1/2 cup granulated sugar
  • 1/2 tsp. ground cinnamon
  • 8 Tbsp. 1 stick salted butter, melted

Instructions

  • 1.Preheat the oven to 375°F. Stir together the sliced pears, granulated sugar, lemon juice, vanilla, cinnamon, and salt in a medium bowl. Add cornstarch and stir. Pour the mixture into a 9-inch deep-dish pie plate or an 8-by-8-inch baking dish.
  • For the topping: Stir together the flour, brown sugar, granulated sugar, and cinnamon in the same bowl. Add the melted butter and stir until the mixture is crumbly. Sprinkle the topping over the peach mixture.
  • Bake until golden brown and bubbly, about 40 minutes. Serve with vanilla ice cream, if you like.
