Another favorite recipe: Cheeseburger Soup!

I have grown up eating Cheeseburger Soup. I was a kid when we first enjoyed it at a potluck and it has become a family favorite. As my own family has grown, I found a new love of cooking and baking. So whenever we have Cheeseburger Soup, we enjoy it with warm, freshly baked french bread. Mmmmmm! It is so good! We soak up the creamy goodness with each delicious piece.

We typically make it with velveeta cheese but I have seen some versions that use shredded cheddar cheese. I’ve tried it but recommend if you go that route that you use MILD cheddar as sharp cheddar made it too “tangy”. Our preferred choice is velveeta.

This recipe I have tweaked to suit our tastes. My timing is an estimate, so please bear with me. I’d love to hear how it goes for you!

Cheeseburger Soup

A hearty, creamy soup full of meat, veggies, and flavor! Perfect for warming up on a cold day!

Ingredients

  • 4 tablespoons butter
  • 1 lb ground beef or ground deer, ground turkey, etc
  • 1 whole onion chopped (Approx ¾ cup)
  • 4-5 carrots shredded/grated with large grater (Approx ¾ cup)
  • 4 stalks of celery chopped (Approx ¾ cup)
  • 1 Tablespoon dried basil
  • 4 cups cubed potatoes
  • 3 cups chicken broth
  • ¼ cup all-purpose flour
  • 1 ½ cups milk
  • 8 oz Velveeta cheese cubed (can sub 2 cups mild cheddar)
  • Salt & Pepper to taste

Instructions

  • Brown the ground beef, drain and set aside.
  • Melt butter in a large pot over medium heat; add onion, carrots, celery and basil. Cook and stir until veggies are softened, 5 to 7 minutes.
  • Stir in flour. Add potatoes and broth; stir well so potatoes are covered. Bring to a boil; reduce heat to low and simmer until potatoes are tender, 10 to 15 minutes.
  • Gradually stir in milk. Add cheese and stir periodically until fully melted. Add salt and pepper to taste.
  • Serve hot, and enjoy! We like to have french bread with it for dipping!
